This is me

My name is Ali Cirak, and I was born in Turkey in 1994. I am the son of a master butcher, and my upbringing instilled in me a love for the culinary arts. From 2008 to 2012, I pursued my passion by studying Culinary Arts at the Tourism and Hotel Management High School, where I graduated with first place honors.

During my studies, I completed internships at some of Turkey's most renowned five-star hotels between 2010 and 2012. In 2012, I earned my mastership certificate, which further solidified my expertise in the field.

From 2013 to 2018, I worked as a chef in various five-star hotels and luxury restaurants in Azerbaijan, where I honed my skills and gained invaluable experience in creating exquisite dishes. In 2018, I obtained a Qualified Instructor Certificate, which enabled me to share my knowledge and expertise with aspiring chefs.

In 2020, I graduated from the Department of Culinary Arts at Anatolian University, further enhancing my culinary knowledge and skillset. I am fluent in English, Turkish, Azerbaijani, and Russian, which has allowed me to communicate effectively with colleagues and clients from diverse backgrounds.

I am passionate about creating exceptional dishes and providing unparalleled culinary experiences for my clients. My extensive training, experience, and expertise make me a valuable addition to any culinary team.

I'm trying to change something...

In our diverse and culturally rich world, there are countless cuisines with thousands of dishes unique to each culture. While we've attempted to create new fusion dishes by combining elements from different cuisines, have we ever considered bringing back the flavors of extinct cultures from history? From the Sumerians, Ancient Egyptians, Assyrians, Babylonians, Romans, Huns, Ancient Chinese, Ottomans, and many other civilizations, I have been fascinated since childhood by what our ancestors ate, what their taste buds were like, and the culinary traditions they developed. For years, I have devoted myself to uncovering some of the lost recipes of these ancient civilizations.

To achieve this goal, I have immersed myself in a diverse array of languages and cultures. I have studied the ancient Turkish language and read cuneiform texts to uncover the culinary traditions of the ancient Near East. I have delved into the culinary records of the ancient Chinese to learn about the flavors of the Far East. I have even collaborated with an Assyrian researcher friend living in Australia who speaks the ancient Assyrian language to unearth the recipes of the oldest Middle Eastern dishes.

My ultimate aim is to bridge the gap between ancient culinary traditions and modern cuisine by bringing back the food of our ancestors and allowing people to savor the flavors of history. Through my efforts, I hope to revolutionize the way we approach food and culinary traditions, and to inspire people to embrace new and innovative culinary experiences.

I have worked in many hotels and restaurants during my 14-year business life in the tourism sector. I added value and innovation to the businesses I worked for and learned a lot from them.
